Ingredients:
½ Cup butter (1 stick), softened
½ Cup sugar
1 Egg
1 tsp almond extract
1 ½ Cups flour
½ tsp baking soda
¼ tsp salt
Directions:
Preheat the oven to 325 degrees. Cream the butter and sugar together until smooth. Add the egg and almond extract and mix all together.
In a separate bowl, mix the flour, baking soda and salt together. Slowly add to the cookie mixture until well combined.
Scoop into 1-inch balls and then flatten on a parchment lined cookie sheet. Sprinkle with white sugar if desired.
Bake for 12-14 minutes and cool on racks.
Makes about 1 ½ dozen cookies.
