Ingredients:
2 cups barley flour (If grinding your own flour, make sure it is fine)
1/2 cup old fashioned oatmeal
1/3 cup cheddar cheese, shredded
1/4 cup Parmesan cheese, grated
1/3 cup unsweetened applesauce
3 tbsp. olive oil
Directions:
Preheat the oven to 350 degrees Fahrenheit. Place parchment paper on 2 large cookie sheets.
Combine barley flour, old-fashioned oatmeal, cheddar cheese, Parmesan cheese, applesauce and olive oil in a large mixing bowl. Add 6-8 tbsp. water to help form the dough.
Roll the dough with a rolling pin until it is 1/4-inch thick.
Use a small round shaped cookie cutter to cut out the shapes. Use the scraps to re-roll more dough and cut more shapes.
Place the biscuits about an inch apart on the baking sheets, and bake for 15-20 minutes, until firm and browned on the bottom.
Cool the biscuits on a wire rack inside the cool oven overnight. Transfer them to an airtight container and store for up to 2 weeks.
