Ingredients:
1/2 cup butter (1 stick), softened
1 cup sugar
2 eggs
1/2 teaspoon vanilla extract
3/4 cup applesauce
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
4 T cinnamon
Apple Mixture:
· 2 Apples peeled and sliced thin
· 2 tsp cinnamon
· ¼ cup brown sugar
· ¼ Cup quick cooking oats
· 4 T butter melted
· 2 T flour
Cinnamon Glaze:
1 1/2 cups powdered sugar
2 to 3 tablespoons warm water
1 tsp. cinnamon
Directions:
Heat oven to 350 degrees F. Coat 2 bread loaf pans with non-stick cooking spray.
Beat butter and sugar until well blended. Beat in eggs and vanilla. Mix in applesauce.
Combine flour, baking soda, salt and cinnamon. Gradually add to the butter mixture until well blended.
Spread into prepared bread loaf pans.
Mix the Apple Mixture together until the apples are evenly coated. Spoon the mixture over both loaf pans – dividing over both evenly.
Bake 30-35 minutes or until a wooden toothpick inserted in center of the cake comes out clean. Let cool.
Stir together powdered sugar, cinnamon and enough warm water to make icing of your preferred consistency. Drizzle over slightly warm cakes and enjoy!
