Ingredients:
· 3 cups all-purpose flour
· 1 ½ cups sugar
· 1 Tablespoon baking powder
· ¼ tsp baking soda
· ½ tsp. salt
· ½ tsp ground cinnamon
· ½ tsp ground nutmeg
· ¼ tsp ground ginger
· 4 large eggs, beaten
· 1 ¼ cups mayonnaise
· 1 tsp vanilla extract
· 2 large Granny Smith Apples, peeled and chopped small
Crumb Topping:
· 1 Cup all-purpose flour
· ¾ Cup sugar
· 1 tsp ground cinnamon
· ½ Cup mayonnaise
Directions:
1. Preheat oven to 350 F. Grease or spray a 13 x 9-inch baking pan.
2. In a large bowl, combine the flour, sugar, baking powder, salt, baking soda, and spices. Set aside.
3. In another medium bowl, combine the eggs, mayonnaise and vanilla and whip until smooth.
4. Add the apples to the flour mixture and toss. Add the mayonnaise mixture until combined. The dough will be stiff.
5. Evenly spread the dough into the prepared pan.
6. To make the crumb topping; in a medium bowl, combine all the topping ingredients. With a fork gently mix the ingredients together to form crumbs; evenly sprinkle over the batter.
7. Bake 40-50 minutes or until a toothpick inserted in the center comes out clean and the crumbs are golden brown. Cool on a wire rack.
