Baked Chicken Cheesy Chimichangas

Ingredients:

  • 1 lb. cooked chicken (use your leftover chicken from the night before) 😊

  • 8 oz. package cream cheese, softened

  • 8 oz. Taco blend shredded cheese

  • 2 cups shredded mozzarella cheese

  • 1 ½ T Taco seasoning (see recipe)

  • ½ Cup light cream or ½ and ½

  • ½ Onion, chopped

  • 8 Flour Tortillas

  • Cooking spray

  • Salsa (any kind)

  • Sour cream

Directions:

  1. In a mixer, combine the cream cheese, taco blend cheese, taco seasoning, chopped onion and light cream or ½ & ½ until smooth.

  2. Add the chicken and mix until well combined.

  3. Spread evenly in the center over each tortilla.

  4. Sprinkle a handful of the shredded mozzarella cheese over the top of the chicken mixture on each tortilla. Tuck in the sides and roll up each tortilla.

  5. Lay seam side down on a parchment lined or sprayed with cooking spray cookie sheet.

  6. Spray the tops with cooking spray.

  7. Bake at 350 degrees F for 15 minutes. Turn them over and bake for an additional 15 minutes.

  8. Serve with sides of salsa, sour cream, guacamole and shredded cheese!

Homemade Taco Seasoning:

  • 4 T chili powder

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp crushed red pepper flakes

  • ¼ tsp cayenne pepper

  • 1 tsp dried oregano

  • 2 tsp paprika

  • 2 T ground cumin *(see more made at home seasonings recipes under the "dressings and seasonings" tab!)
