Ingredients:
¾ Cup Whipping cream
4 T prepared horseradish
2 T fresh lemon juice
½ tsp salt
1 3-lb beef tenderloin roast
Salt and pepper
Directions:
To Make Horseradish Sauce: Whip the cream until stiff. Stir in the horseradish, lemon juice and salt. Cover and refrigerate for 1 hour.
Preheat the oven to 500 degrees.
Thoroughly coat the beef roast with salt and pepper.
Place the beef tenderloin in a shallow pan and bake for 15 minutes (for rare roast, 18- 20 minutes for medium roast). Turn oven off and leave the roast in the oven for two hours. (DO NOT OPEN OVEN DOOR DURING THIS TIME!)
Remove roast and slice into 1/2-inch-thick slices.
Serve with the horseradish sauce.
