Big Mac Fried Fajitas

Big Mac Fried Fajitas

Ingredients: (Makes 6)

  • Six 8 inch Flour Tortillas

  • 1 Lb. 80/20 Grass Fed Hamburger

  • 1 8 oz. package shredded cheddar cheese

  • 1 Lb. Bacon

  • Shredded Lettuce

  • 2 Large Tomatoes

  • 1 medium onion

  • 1 pkg. Baby Bella mushrooms

  • 2 T butter

  • Thousand Island Dressing (make a day ahead) (See my recipe for make your own) below:

Directions:

  • Prepare all of your toppings. Slice tomatoes into small pieces. Cook your bacon until crispy and then chop into pieces. Slice your onions and mushrooms. Place in separate bowls.

  • Make your Thousand Island Dressing. (see recipe below)

  • Saute your onions and mushrooms in butter. Set aside.

  • Make 6 hamburger patties and flatten out. Place each one on top of a flour tortilla and place onto a plate until ready to fry.

  • In the same frying pan - place the tortilla with the hamburger patty facing down in a medium-heat frying pan. (Cook one at a time)

  • Cook for 2-3 minutes. Flip over, sprinkle some shredded cheddar cheese on top and let sit for 30 seconds. Remove from pan and place immediately onto a plate.

  • Repeat for the next five.

  • Top with the bacon, onions, mushrooms, lettuce and tomato.

  • Add the thousand island dressing to the top and devour!

    Thousand Island Dressing:

    Ingredients:

  • 1⁄2 cup mayonnaise

  • 2 tablespoons ketchup

  • 1 tablespoon white vinegar

  • 2 teaspoons sugar

  • 2 teaspoons sweet pickle relish

  • 1 teaspoon white onion, finely minced

  • 1⁄8 teaspoon salt

  • 1 dash black pepper

    Directions:

  • Combine all of the ingredients in a small bowl. Stir well.

  • Place dressing in a covered container and refrigerate for several hours, stirring occasionally, so that the sugar dissolves and the flavors blend.

  • Use within 1 week. (If you want a larger batch - just double the recipe!)
