Ingredients: (Makes 6)
Six 8 inch Flour Tortillas
1 Lb. 80/20 Grass Fed Hamburger
1 8 oz. package shredded cheddar cheese
1 Lb. Bacon
Shredded Lettuce
2 Large Tomatoes
1 medium onion
1 pkg. Baby Bella mushrooms
2 T butter
Thousand Island Dressing (make a day ahead) (See my recipe for make your own) below:
Directions:
Prepare all of your toppings. Slice tomatoes into small pieces. Cook your bacon until crispy and then chop into pieces. Slice your onions and mushrooms. Place in separate bowls.
Make your Thousand Island Dressing. (see recipe below)
Saute your onions and mushrooms in butter. Set aside.
Make 6 hamburger patties and flatten out. Place each one on top of a flour tortilla and place onto a plate until ready to fry.
In the same frying pan - place the tortilla with the hamburger patty facing down in a medium-heat frying pan. (Cook one at a time)
Cook for 2-3 minutes. Flip over, sprinkle some shredded cheddar cheese on top and let sit for 30 seconds. Remove from pan and place immediately onto a plate.
Repeat for the next five.
Top with the bacon, onions, mushrooms, lettuce and tomato.
Add the thousand island dressing to the top and devour!
Thousand Island Dressing:
Ingredients:
1⁄2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon white vinegar
2 teaspoons sugar
2 teaspoons sweet pickle relish
1 teaspoon white onion, finely minced
1⁄8 teaspoon salt
1 dash black pepper
Directions:
Combine all of the ingredients in a small bowl. Stir well.
Place dressing in a covered container and refrigerate for several hours, stirring occasionally, so that the sugar dissolves and the flavors blend.
Use within 1 week. (If you want a larger batch - just double the recipe!)
