Ingredients:
1 onion (chopped) 2 cups baby carrots (chopped) 4 cloves garlic (chopped) 1 tsp. chili powder 1 tablespoon ground cumin 1 pinch black pepper 2 cups chicken broth 2 (15 ounce) cans black beans 1 (15 ounce) can whole kernel corn 1 (14.5 ounce) can crushed tomatoes 1 package fresh tortellini (Cooked separately)
Parmesan cheese (optional)
Directions:
Add all ingredients except for the tortellini to a crock pot. Let cook on low for 6-7 hours or on high for 4-5 hours.
Add the “cooked” tortellini during the last ½ hour of cooking time to heat through.
Serve with parmesan cheese sprinkled on top if desired.
