Ingredients:
4 Salmon Fillets, skin removed
½ Cup butter
3 1/2 Tablespoons of Seafood Seasoning (Creole Blend)
1 Tablespoon of ground cayenne pepper
½ teaspoon black pepper
¼ teaspoon dried thyme
¼ teaspoon dried basil
¼ teaspoon dried oregano
** If you don’t have seafood seasoning – use the following spices in place of:
(2 T paprika, 2 tsp salt, 1 T onion powder, 1 T garlic powder) **
Directions:
In a small bowl, mix seafood seasoning, cayenne pepper, black pepper, thyme, basil and oregano. Set aside.
Brush salmon fillets on both sides with 1/4 cup butter, and sprinkle evenly with the seasoning mixture. Drizzle one side of each fillet with the 1/2 remaining butter.
In a large skillet over high heat, cook salmon, butter side down, until blackened, 2 to 5 minutes. Turn fillets, drizzle with remaining butter, and continue cooking until blackened and fish is easily flaked with a fork.
Serve over Rice of your choosing! And Veggie – Brussel Sprouts perhaps?
