Ingredients:
1 cup creole mustard
2 Tablespoons mayonnaise
1 Tablespoon Worcestershire sauce
1 teaspoon fresh ground black pepper
2 pounds center cut prime sirloin of beef
1/2 cup vegetable oil
1-1/4 sticks whole butter, cut into pats
Blackened Seasoning:
2 Tablespoons paprika
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 Tablespoon sea salt
2 teaspoons black pepper
1 teaspoon cayenne pepper
1 teaspoon oregano
1 teaspoon thyme
(Mix all spices together)
Directions:
Mix mustard, mayonnaise, Worcestershire, and pepper together. Set aside.
Preheat oven to 350 degrees.
Coat Sirloin with oil and dredge on all sides with seasoning. Place sirloin in a well- heated (hot) iron skillet. Add 2 to 3 pats of butter. Cook 5 minutes on each side, adding butter as needed.
Transfer to oven and roast until meat reaches internal temperature of 140 degrees.
Slice sirloin into 12 even slices and arrange on a serving platter. Serve with the mustard sauce.
