Calzone Pockets

Ingredients:


Dough:

  • 1 T (1 packet) Instant dry yeast

  • 2 T white sugar

  • 1 teaspoon salt

  • 1 1/3 Cups warm water (approx. 105 degrees F) *

  • 2 T Olive Oil

  • 3 ½ Cups all-purpose flour

  • 1 Egg + 2 T water (for egg wash)

Fillings:

  • Ricotta Cheese

  • Mozzarella Cheese, shredded

  • Ground pork sausage

  • Hamburger

  • Pepperoni

  • Peppers, mushrooms

  • Italian Seasoning

  • Pizza Sauce (for dipping)

  • Fresh Parmesan cheese

(Any other ingredients you like!)


Directions:


To make the Dough:

  1. In the bowl of a stand mixer, combine the yeast, sugar, salt, water, olive oil, and flour.

  2. Knead on low with your dough hook attachment on low until the dough starts to come together. Continue kneading until the dough forms a nice soft dough ball and the sides of the bowl are clean.

  3. Let the dough rise in a lightly greased bowl covered, for one hour, until doubled in size.

To make the fillings and assemble:

  1. Prepare your fillings. Cook your sausage and hamburger. Chop up your veggies. Sauté your peppers and mushrooms if desired. Mix your Ricotta with the Italian Seasoning.

  2. Divide the dough into 4 equal pieces. Roll into circles with a 12-inch diameter.

  3. Spoon your toppings and ricotta mixture onto one half of the dough, leaving a one-inch edge. Top with ½ Cup mozzarella cheese per calzone. Fold the dough over the filling and seal the edges.

  4. Transfer the calzones to a lightly greased baking sheet. Use a sharp knife to make three slits in the top of each calzone to allow steam to vent.

  5. Brush the egg wash over each calzone.

  6. Bake in a 400-degree oven for 15 to 20 minutes until the bread is golden brown.

  7. Top with your favorite pizza sauce and fresh parmesan cheese!

Makes 4 calzones!

*I use a meat thermometer to measure the degrees of hot water. (approx. 2 minutes in the microwave) Enjoy!
