Ingredients:
1 large bunch broccoli rabe
1 small yellow onion, chopped
1 lb. chicken sausage (I used flavored), cut into 1/2" chunks
5 cloves garlic, chopped
16 oz. Pasta of your choice (I used conchiglie - small shells)
1 1/2 cups organic chicken broth
1/2 Cup grated parmesan cheese
1 Cup low-fat mozzarella cheese, optional
salt, pepper

Directions:
Wash the broccoli rabe and cut 2" off the stems, then cut into quarters. Set aside.
Bring a large pot of water to a boil and add the pasta and cook until al dente.
During the last 6 minutes of cooking the pasta add the broccoli rabe directly in with the pasta. Boil until the broccoli rabe is softened and the pasta is done.
Drain both together and set aside.
In a large saute pan, add the olive oil, garlic and onion. When they start to soften and brown, add the sausage. Cook until heated through.
Add the broccoli rabe and pasta to the cooked sausage. Mix to combine.
Add the chicken broth, parmesan cheese, salt and pepper. Stir to combine.
Cook until heated through and the cheese is melted.
Top with the mozzarella cheese, if desired. Stir to combine and serve.
