Ingredients:
Seasoning:
1 Tablespoon brown sugar
1 Tablespoon paprika
1 teaspoon chili seasoning
1 teaspoon each onion powder, garlic powder, black pepper
Other Ingredients:
2 T Olive Oil
1 pound Chicken breast or tenders, cut into bite size pieces
1 pound Brussel Sprouts, cut in half
1/3 cup chicken broth
1 T minced fresh garlic
2 teaspoons hot sauce
2 Tablespoons butter
Directions:
Combine the seasoning ingredients and set aside. Toss the chicken bites in with the seasoning, reserving 1 Tablespoon for the Brussel sprouts.
Heat a large skillet to medium heat and add the olive oil and the seasoned chicken.
Cook for at least 3-4 minutes and then using a tong flip the chicken and cook an additional 3-4 minutes until cooked through and golden brown.
Remove the chicken from the skillet and set aside.
Add additional olive oil to the skillet and place the Brussel sprouts cut side down.
Sprinkle with the reserved seasoning mixture. Cook for 6-7 minutes stirring occasionally, until tender on the inside. Remove from the skillet and set aside.
Reduce the heat to low and add the chicken broth, scraping up all the brown bits at the bottom of the skillet.
Stir in the garlic, hot sauce and butter. Allow the sauce to simmer until reduced by half.
Add the cooked chicken and sprouts back to the skillet.
Toss in the sauce and cook additional 3-4 minutes until heated through.
Serve over rice if desired.
