Cinnamon Oatmeal Breakfast Cake

Ingredients:

  •  1 1/2 cups rolled oats

  •  1 cup milk

  •  2 large eggs

  •  1/2 cup maple syrup

  •  1/4 cup melted coconut oil

  •  1 tsp baking powder

  •  1/2 tsp baking soda

  •  1 tsp ground cinnamon

  •  1/4 tsp ground nutmeg

  •  1/4 tsp salt

  •  1 tsp vanilla extract

For the Cinnamon Swirl:

  •  2 tbsp. brown sugar

  •  1 tbsp. ground cinnamon

  •  2 tbsp. melted butter


Directions:

  1.  Preheat oven to 350°F and grease a tube cake pan.

  2.  Soak the oats: In a bowl, combine oats and milk. Let sit for 8 minutes to soften.

  3.  Mix the wet ingredients: In another bowl, whisk eggs, maple syrup, melted coconut oil, and vanilla extract.

  4.  Combine the dry ingredients: In another separate bowl, stir together the baking powder, baking soda, cinnamon, nutmeg, and salt.

  5.  Make the batter: Add the wet ingredients to the soaked oats, then fold in the dry ingredients. Mix until well combined.

  6.  Create the cinnamon swirl: In a small bowl, mix brown sugar, cinnamon, and the melted butter.

  7. Pour half of the batter into the prepared pan. Drizzle the cinnamon mixture over it, then top with the remaining batter. Swirl gently with a knife. Bake for 30-35 minutes, or until a toothpick comes out clean.

  8. Let the cake cool before slicing and serving.
