Ingredients: (Makes 8 Balls)
16 oz. imitation crab, flake style
1 cup finely diced green or red bell pepper
1 cup of finely diced onion
4 Tablespoons mayonnaise
2 Tablespoons lemon juice
2 large eggs
2 tsp Cajun seasoning
Ground black pepper to taste
1 cup of toasted flavored bread crumbs
Lemon-Mayo Sweet Sauce:
½ Cup mayonnaise
2 T Lemon Juice
1 tsp Sugar
1 Garlic clove, finely minced (Mix all ingredients together) Serve on the side.
Directions:
Preheat oven to 400 degrees. Lightly spray a baking sheet with cooking spray.
Shred crab into smaller pieces and place in a medium bowl with all the ingredients, using 1/2 of a cup of the breadcrumbs.
Mix well and shape the mixture into 8 balls. (each ball is approx. 1/3 measuring cup)
Coat the crab balls in the remaining bread crumbs, pressing crumbs onto the balls, and place on the baking sheet.
Bake for 20- 25 minutes or until golden brown.
Serve hot with the lemon mayo sweet sauce on the side.
