Crack Chicken Chili for the Crock Pot


Ingredients:

  • 1 Rotisserie or baked whole Chicken - skin removed, meat pulled off bones and chopped

  • 3 Cups Organic Chicken Broth

  • 1 Cup half and half

  • 2 (15 oz.) cans great northern beans or butter beans, rinsed and drained

  • 1 (11 oz.) can white corn, drained

  • 2 (4 oz.) cans chopped green chilies, undrained

  • 2 Tbsp. dried minced onion flakes

  • 2 Tbsp. dried minced garlic

  • 2 tsp. Cumin

  • 1 tsp. Chili seasoning (make your own - see my recipe under the tab - "dressings & seasonings")

  • 1 lb. Bacon, cooked and crumbled

  • 1 packet dry Ranch dressing mix

  • 2 Cups shredded cheddar cheese, plus additional for topping if desired.

Directions:

  1. Add all ingredients to your crock pot in the order listed above.

  2. Stir all together.

  3. Set your Crockpot on low and cook for 6 -7 hours.

  4. Serve and top with additional cheddar cheese if desired.
