Ingredients:
½ Cup Cocoa powder
1 ½ Cups Confectionary Sugar
½ Cup Semi-sweet chocolate chips
2 Egg whites
2 tsp corn starch
1/4 tsp Salt
1 tsp Vanilla extract
Directions:
Preheat the oven to 325°F.
Line 1 cookie sheet pan with parchment paper.
In a large bowl, sift in the dry ingredients: sugar, cornstarch, cocoa powder and salt.
In an electric mixer; beat in the egg whites and vanilla into the dry mixture.
Fold in the chocolate chips using a spatula. (You will have a sticky cookie dough.)
Using 2 spoons or a cookie scoop, drop small 1- inch sized batter onto the pan and bake for about 12 – 15 mins or until the cookies rise and crack on the top with a shiny crust.
Makes about one dozen cookies.
