Double Layer Coffee Cake


Ingredients: Streusel Topping:

  • 1 1/2 cups brown sugar

  • 1/2 cup all-purpose flour

  • 2 teaspoons ground cinnamon

  • 1/2 cup cold butter

Cake:

  • 2 cups all-purpose flour

  • ¾ cup white sugar

  • 2 teaspoons baking powder

  • ½ teaspoon salt

  • ½ cup cold butter

  • 1 egg

  • ¾ cup milk

  • 1 ½ teaspoons vanilla extract

Directions:

  1. Preheat the oven to 350 degrees F. Grease and flour a tube pan.

  2. Make streusel topping: Combine sugar, flour, and cinnamon in a medium bowl. Cut in butter until mixture resembles coarse crumbs. Set aside. (for filling and topping)

  3. Make the cake: Combine the flour, sugar, baking powder, and salt in a large bowl. Cut in the butter until mixture resembles coarse crumbs. Whisk together the egg and milk in a separate bowl; stir in vanilla. Pour the egg mixture into the crumb mixture; mix just until moistened.

  4. Spread half of the cake batter into the prepared pan and sprinkle with streusel topping. Pour the remaining batter over the top - carefully spreading over the streusel layer. Top with the remaining streusel.

  5. Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 35 to 45 minutes. Allow to cool before slicing.
