Ingredients:
1 1/2 Cups Yellow Corn Meal
3/4 Cup All-purpose flour
2/3 Cup sugar
1 Tablespoon baking powder
1 tsp. salt
1 Cup Buttermilk
1 large egg
3 Tablespoons butter, melted
Directions:
Pre-heat the oven to 400 degrees. Line a 12-cup muffin pan with paper liners or spray with non-stick cooking spray.
Combine the dry ingredients.
In a separate bowl, combine the buttermilk, egg and butter.
Add the wet ingredients to the dry ingredients just until moistened.
Pour the batter evenly into the muffin tins.
Bake for 15-20 minutes or until golden brown.
