Ingredients:
1 Can (14 oz.) sweetened condensed milk
1/3 Cup Key Lime Juice (ready made juice)
1 Lime (use juice and zest)
3 tsp grated lime zest (save additional for top decoration)
1 (8 oz.) thawed Whipped Topping
1 ready made Graham cracker crust (or Make your own - recipe below):
1/3 cup butter, melted
2 cups finely crushed graham crackers (approx. 30 squares)
3 T sugar
Directions:
Make your own graham cracker crust: (note: if using a store bought ready made crust - you do not need to bake it)
Preheat oven to 350 degrees. In a medium bowl combine the graham cracker crumbs, melted butter and sugar until well mixed. Press the mixture into a 9 inch glass pie plate firmly and evenly against the bottom and sides of the pie plate.
Bake for 10-12 minutes or until light brown. Cool completely on a cooling rack and set aside.
Make your filling: Zest the whole lime and set aside. (save some to sprinkle on the top of your pie)
Combine the sweetened condensed milk, 1/3 cup from the ready made lime juice and the additional juice from the fresh lime and 3 tsp. of the lime zest together in a medium sized bowl.
Fold in the whipped topping and blend well.
Spoon into the cooled pie crust and garnish with the saved additional lime zest.
Chill for 3 hours or overnight.
