Enchilada Chicken

Ingredients:

  • 2 lbs. Boneless Chicken Tenders

  • 1 Package Taco Seasoning

  • 1 10 oz. Can Enchilada Sauce

  • 1 Cup shredded cheddar cheese

  • 1 Cup shredded mozzarella cheese

  • 6 Green onions (scallions), chopped

  • Salt, pepper


Directions:

  1. Preheat Oven to 350 degrees.

  2. Cut chicken tenders into “one inch” chunks and place into a 9x13 sprayed baking dish or pan. Season with salt and pepper.

  3. Sprinkle taco seasoning over chicken tenders and mix up with a spoon.

  4. Pour the Enchilada sauce over the chicken.

  5. Sprinkle the cheese(s) over the top and scatter the chopped green onions (scallions) over the top of the cheeses.

  6. Bake at 350 for 40-45 minutes until the chicken is cooked through.

*Serve over white rice or Zucchini Noodles (Zoodles)* Enjoy!
