Ingredients:
1 T Olive oil
4 T Butter
1 C onion, chopped
½ C celery, chopped
2 cloves garlic, minced
¼ C flour
1 Quart ½ & ½
16 oz. chicken broth
2 Cups cooked chicken, cubed
½ tsp parsley
½ tsp thyme
¼ tsp nutmeg
1 tsp salt
1 tsp pepper
1 C carrots, shredded
1 12 oz. package of gnocchi
3 oz. fresh baby spinach
Directions:
Fry in a large pot – olive oil, butter, onion, celery, carrots, and garlic until tender.
Add flour and the ½ & ½. Simmer for 10 minutes and then add the remaining ingredients, saving the spinach for last.
Cover and Simmer for 20 minutes more.
