Ingredients:
2 1/2 cups old fashioned rolled oats
1 cup walnuts, pecans or mixed nuts, chopped
1/4 cup honey
1/4 cup butter
1/3 cup brown sugar
1 teaspoon vanilla extract
¼ Cup Walnuts or Pecans
¼ Cup mini Chocolate Chips
¼ Cup Flaked Organic Coconut
Directions:
Preheat the oven to 350 degrees.
Place the oats and mixed nuts on a rimmed baking sheet and bake for 8-10 minutes until lightly toasted.
While the oats are toasting, add the honey, butter, and brown sugar to a small saucepan. Cook over medium heat until the butter melts and the sugar dissolves, stirring occasionally. When butter mixture is ready, remove it from the heat and stir in the vanilla.
When the nuts and oats are done baking, place them in a large bowl.
Pour the mixture over the oat and nut mixture and stir to combine. Add the walnuts and coconut and combine.
Before adding the chocolate, wait about 10 minutes for the mixture to cool a bit, then stir in the chips and combine. Make sure none of the oats are dry.
Place the coated oat mixture in a 9-inch square parchment lined pan. (Or line with tin-foil and spray with cooking spray) Press the mixture firmly into the bottom of the pan. Place in the refrigerator and let chill for at least 2 – 3 hours. Lift the bars from the pan and cut into desired shape. Store in the refrigerator or freezer.
*Note* You can substitute the mix-ins for other ingredients: dried fruits, other nuts, etc.
