Herb Roasted Potatoes Poupon

Ingredients:

  • 1/3 Cup Dijon mustard

  • 2 T olive oil

  • 1 clove garlic, chopped

  • ½ tsp Italian seasoning

  • 6 medium red potatoes, cut into chunks (about 2 pounds)


Directions:

  1. Mix all ingredients except potatoes in a small bowl.

  2. Place potatoes in a lightly greased 13 x 9 x 2-inch baking pan. Or on a shallow baking sheet; toss with mustard mixture.

  3. Bake at 425 degrees for 35 to 40 minutes or until potatoes are fork tender, stirring occasionally.
