Ingredients:
Part 1-
· 2 Egg Yolks
· 2 T Kahlua
· ¼ Cup sugar
· 3 oz. semi-sweet chocolate chips
· ¼ Cup butter
Part 2-
· 2 T Kahlua
· 2 Egg Whites
· 1 ½ tsp sugar
· 1 Cup Whipping Cream
Directions:
1. Beat egg yolks & 2 T Kahlua in a double boiler. Beat in ¼ Cup sugar & beat until slightly thickened.
2. Cook at medium heat stirring constantly until thickened, about 10 minutes.
3. Melt the chocolate chips and butter together and stir in the remaining 2 T Kahlua. Add to the egg mixture.
4. Beat the egg whites until soft peaks form. Add the remaining sugar and beat until stiff peaks form. Add to the chocolate mixture.
5. Beat whipping cream until stiff and fold into the chocolate mixture.
6. Spoon mousse into parfait glasses and chill for 3 hours.
Top with whipped cream! (Makes 4 servings)
