Ingredients:
1 cup graham cracker crumbs
1/4 cup sugar
1/4 cup melted butter
2 egg yolks
1 can (14 oz.) sweetened condensed milk
1/2 cup fresh lemon juice
Zest of 1 lemon
Whipping cream (to top if desired)
Directions:
1. Preheat the oven to 350 degrees F. Spray an 8x11 baking dish with non-stick cooking spray.
2. In a bowl, mix together graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the baking dish.
3. In a separate bowl, whisk together egg yolks, condensed milk, lemon juice, and lemon zest. Spoon the mixture over the graham cracker crusts.
4. Bake for 15-20 minutes or until set. Let cool completely.
5. Chill in the refrigerator for at least 1 hour or overnight before serving.
6. Cut into squares and top with whipped cream if desired.
