Ingredients:
2 Heads of Turnip
1 Medium Leek, chopped into small pieces
¼ Cup chopped onion
3 cloves garlic, minced
2 T extra virgin olive oil
5 T butter, reserved
Salt, pepper to season
Directions:
Peel and Cut the Turnips into 1-inch chunks. Place in a large pot of water and bring to a boil. Simmer until tender – approx. 20 minutes.
In a medium sized sauté pan add the Extra Virgin Olive oil and 1 T butter. Once melted, add the chopped leek, onion and garlic. Season with salt and pepper.
Sauté until tender and slightly browned. Approx. 10-15 minutes. Set aside.
Once the turnip is cooked, drain and return to the same pot.
Add the 4 T reserved butter and the sautéed vegetables. Stir to mix and then mash everything together, until soft.
For a smoother texture – add to blender or vita-mix and puree together until nice and creamy. Serve!
