Mini Peach Cobblers



Ingredients: 1 Cup flour 1 Cup sugar 2 tsp. baking powder 3/4 Cup milk 1/4 tsp. salt 1 stick butter, melted 1 can (15 oz.) Diced peaches or 2 cans (15 oz.) halved peaches (cut up) Cinnamon Brown sugar 12 cup muffin pan


Directions: 1. Preheat oven to 350 degrees. 2. Put 2 tsp. of melted butter into each regular size muffin tin. 3. Combine the first 5 ingredients in a medium size bowl. Flour, sugar, baking powder, milk and salt until nice and smooth. 4. Pour the batter equally into the twelve cups on top of the melted butter. 5. Put the diced peaches equally on top of the batter in the muffin pan. 6. Sprinkle a generous portion of brown sugar and then cinnamon on top. 7. Bake for 12-15 minutes. Let them cool almost completely before taking out of the pans.

* I used parchment paper in mine to keep together - but you don’t need to. *Optional - Serve with fresh whipped cream or vanilla ice cream!
