Ingredients
1 box Angel Hair Pasta, broken into 2-inch pieces, cooked al dente
2 large eggs
2 cups sour cream
1/2 cup parmesan cheese, grated
1 teaspoon garlic powder
2 cups Swiss and Gruyere cheese, shredded, divided
1 (10 ounce) bag of fresh Spinach
1 (2.8-ounce) can crispy fried onions, divided
Directions
Preheat the oven to 350 degrees F.
Cook the pasta until al dente and set aside.
Grease a 2-quart baking dish.
In a large bowl, beat the eggs.
Add the sour cream, the parmesan cheese, and the garlic powder.
Add the cooked pasta, 1 1/2 cups of the shredded cheese, the spinach, and 1/2 of the onions to the egg mixture.
Pour the pasta mixture into the prepared baking dish.
Top the mixture with the remaining onions and the remaining cheese.
Bake, covered, until heated through, for about 25-30 minutes.
Bake uncovered for an additional 10 minutes, until the onions are browned and the cheese has melted.
