
Ingredients:
2 cups old-fashioned oats (not quick oats)
2 tsp. cinnamon
¼ tsp. allspice
1 tsp. baking powder
½ tsp. salt
½ cup brown sugar
1 ¾ cup unsweetened plain almond milk
1 large egg @ room temperature
2 Tbsp. melted butter @ room temperature
1 tsp. pure vanilla extract
Icing Ingredients:
2 Tbsp. soft butter
⅓ cup powdered sugar
1 Tbsp. milk
Directions:
Preheat the oven to 375° degrees.
Spray a 8x8-inch baking dish with non stick cooking spray. Set aside.
In a medium size mixing bowl, whisk together the almond milk, egg, melted butter and vanilla extract.
In a separate large size mixing bowl, mix the oats, cinnamon, allspice, baking powder, salt, and brown sugar.
Add the wet ingredients into the oat mixture and stir to combine.
Pour the mixture into the prepared baking dish.
Bake for 30 - 35 minutes or until the top of the oatmeal is golden brown.
Using an electric mixer, beat the butter until fluffy. Add the powdered sugar and milk and blend until well combined. (add more sugar or milk if needed for consistency)
Allow the oatmeal to cool for 5 minutes.
Drizzle the icing all over the top of the oatmeal and let cool completely. Cut into squares and serve. Store in the refrigerator for up to a week.
