Ingredients:
6 – 8 Pieces wildly caught Salmon Fillets
4 Tablespoons olive oil, reserved
1 Tablespoon butter
2-3 Tablespoons Cajun seasoning
Salt, Pepper to taste
2 T chopped garlic
1 lb. Angel Hair Pasta (or your favorite)
2 Cups Freshly grated Parmesan cheese
Directions:
In a large pot cook your favorite pasta until al-dente.
In a large skillet, add the olive oil and butter. Season (both sides) of the salmon fillets with the Cajun seasoning and salt and pepper. Sauté the salmon fillets in the olive oil, butter and garlic until cooked through. (About 5 – 6 minutes each side). Remove and set aside.
Add the cooked pasta to the pan and stir in 2 T olive oil and combine all the juices together. Add in 1 cup of the freshly grated parmesan cheese and stir until mixed.
Place the salmon fillets back in the pan over the pasta and top with the remaining cup of parmesan cheese.
Serve from the pan!
To make Cajun seasoning: (makes about 1 ¼ cups) – Save for your next recipe!
6 tablespoons paprika
1/4 cup kosher salt
2 tablespoons ground black pepper
2 tablespoons ground white pepper
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon dried thyme
1 tablespoon cayenne pepper
Mix all spices together and store in an air-tight container.
