Ingredients:
2 ½ - 3 lbs. Boneless, skinless chicken tenders
3.5 oz. Basil Pesto (Find my homemade pesto recipe under the "dressings & seasonings" tab!)
3 Roma tomatoes, sliced
8 oz. Fresh Mozzarella, sliced
¼ Cup Parmesan Cheese
Salt, pepper
2T Italian seasoning
2T basil flakes (for top)
Directions:
Preheat oven to 400 degrees F. Lightly coat a 9x13 baking dish with cooking spray.
Place the chicken tenders in the dish and spoon the basil pesto over each chicken tender. Spreading to coat evenly.
Place the sliced tomatoes over the top of each tender.
Sprinkle with salt and pepper.
Place the mozzarella slices on top of the tomatoes.
Sprinkle with Italian seasoning and Parmesan cheese.
Sprinkle the basil flakes over the top.
Bake for 40-45 minutes. Serve and Enjoy!
