Ingredients:
1 box of Ziti or Penne
1 tsp plus 2 T Olive oil
1 lb. boneless pork loin – cut into strips
1 Red Bell pepper
1 small onion, chopped
10 mushrooms, chopped
3 cloves garlic
1 tsp oregano
1 tsp thyme
1 can (15 oz.) crushed tomatoes
1 Cup mozzarella cheese
Directions:
Cook pasta, drain and return to pot. Add ½ tsp olive oil, toss to coat.
Preheat oven to 375 degrees.
Heat 2 Tablespoons of olive oil in a skillet and add the pork tenderloin. Cook until browned. Add the pepper, onion, mushrooms, garlic, oregano and thyme to the pan and cook for 6 to 7 minutes on med-high heat.
Add the crushed tomatoes and cook an additional 5 minutes.
Add to the Pasta and toss together. Pour into a baking dish and top with mozzarella cheese.
Bake for 20-25 minutes and serve.
