Ingredients:
2 Cod Fillets (2 lbs.)
8 Roasted garlic cloves (roasted ahead of time)
2 Small White Onions, chopped
2 T Olive Oil
2 T butter
1 tsp fresh thyme
1 T Adobo Seasoning
¼ Cup White Wine
Directions:
Season the Cod fillets with the Adobo seasoning. (both sides) and set aside.
In a large fry pan, add the olive oil and butter. Once melted stir in the roasted garlic cloves and the chopped onion. Stir until tender.
Add the white wine and thyme. Simmer to reduce about 10 minutes.
Add the cod fillets and cook until white and flaky. Approx. 5-6 minutes per side.
Serve over rice with the additional juices from the fish.
