Rum Cake

Ingredients:

  • 1 Cup chopped Pecans or Walnuts

  • 1 yellow cake mix

  • 1 3.4oz. instant vanilla pudding

  • 4 eggs

  • ¼ C cold water

  • ½ C cooking oil

  • ½ C Rum

Glaze:

  • ¼ lb. butter

  • ¼ C water

  • 1 Cup sugar

  • ½ C Rum

Directions:

  1. Preheat oven to 325 degrees. Grease and flour tube or bundt pan. Sprinkle nuts over bottom of the pan.

  2. Mix all the cake ingredients together in a mixer. Pour the batter over the nuts.

  3. Bake for 1 hour. Cool and invert on a serving plate.

To Make the glaze:

  1. Melt the butter in a saucepan and stir in the water & sugar. Boil for 5 minutes, stirring constantly. Remove from the heat and stir in the rum.

  2. Prick the top of the cake with a fork and drizzle the glaze over the top and sides of the cake. Let it all absorb. Repeat until all the glaze is used.
