Ingredients:
· Chow Mein sauce (see recipe below)
· One package of Rice Vermicelli (cooked according to package directions)
· 20 oz. bag of raw medium/large shrimp
· 1 Cup shredded carrots
· 4 scallions, chopped
· 1 small white onion, chopped
· 4 gloves garlic, minced
· 4 T butter
· 3 T olive oil
· Salt, pepper to taste
Chow Mein Sauce:
· 6 T Oyster Sauce
· 3 T low Sodium Soy Sauce
· 3 T Sesame Oil
· ½ Cup Chicken Broth
· 1 T Cornstarch
· 1 T Granulated Sugar
Directions:
Combine all sauce ingredients into a blender or food processor until thoroughly mixed. Set aside.
In a large frying pan, combine the olive oil and butter together. Once melted add the carrots, scallions, onion, and garlic. Season with salt and pepper.
After the vegetables are nice and tender, add the raw shrimp. Stir to combine and cook until the shrimp is no longer translucent.
Add the sauce and mix together. Simmer for an additional 2-3 minutes until heated through. Serve over the cooked rice vermicelli.
