Ingredients:
2 lbs . Collard greens, cleaned and stems removed
2 T olive oil
1 small onion, diced
1 bunch scallions, chopped
3 cloves garlic, minced
2 T apple cider vinegar
1 T sugar (optional) sweetens them up a bit more
Salt, pepper
Directions:
Sauté the onion, scallions and garlic in the olive oil until soft and fragrant.
Add salt and pepper.
Add in the greens and sprinkle with salt & pepper. Sauté until soft and wilted.
Add the cider vinegar and sugar to the greens and stir until combined.
Serve right away!
