Ingredients:
Jasmine or white Rice (1 cup rice,2 cups water, 1 T butter)
2 T canola or vegetable oil
½ bunch green onions (scallions)
1 can (less sodium) Spam
3 large eggs
1 16 oz. bag Asian mixed frozen vegetables thawed (any variety)
3 T oyster sauce
1 Cup pineapple chunks (optional)
Directions:
1) Prepare the rice according to package directions. Set aside.
2) Chop the spam into small cubes and thinly slice the scallions. In a separate bowl, beat the eggs.
3) In a 12-inch non-stick skillet heat 1 T oil on medium-high heat. Add the eggs and cook 2 minutes, until just scrambled, stirring often. Transfer to a small bowl and set aside.
4) To the same skillet, add the remaining 1 T oil, then stir in the Spam, green onions, and thawed vegetables. Cook 4-5 minutes until the vegetables are warm and the Spam is browned.
4) Add the oyster sauce and the rice and cook 3-5 minutes until heated through, stirring often. Finally stir in the cooked eggs.
5) Remove from heat and top with pineapple if desired.
