Ingredients:
1 lb. Chicken Tenders or 4 thin-sliced chicken breasts
4 T Extra Virgin Olive Oil
1 8 oz. package fresh spinach
1 8 oz. pkg. sliced whole mozzarella cheese
1 10 oz. container of ready-made Spinach, Artichoke & Parmesan Dip & Spread ( I used la terra fina brand)
salt, pepper
Directions:
Season the chicken with salt and pepper on both sides.
In a 12 inch skillet heat the oil on high. Add the chicken and saute for 5-6 minutes each side, until light golden brown.
Remove from the heat and transfer to a plate.
Add the fresh spinach to the skillet and stir until slightly wilted. (You may need to add a bit more EVOO)
Top the cooked spinach with the chicken and juices from the plate.
Spread the spinach, artichoke & parmesan dip over the chicken pieces evenly.
Lay the sliced whole mozzarella pieces over the whole skillet. Cover the pan and let sit on low heat until the mozzarella has melted and the chicken is heated through again.
Plate and serve!
