Ingredients:
1 Cup All purpose non-bleached flour
1 cup rolled oats
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 Cup butter, softened
1/2 Cup packed light brown sugar
2 large eggs
2 teaspoons pure vanilla extract, divided
8 ounces strawberries, chopped
4 ounces cream cheese, softened
1/4 cup granulated sugar
Directions:
Preheat oven to 350 degrees F. Grease a standard 9 x 5 inch loaf pan or line with parchment paper.
In a large bowl, whisk together the flour, oats, baking powder and salt. Set aside.
In your mixer, beat together the butter and brown sugar until light and fluffy.
Add the eggs and 1 teaspoon of the vanilla and mix well.
Gradually mix in the flour mixture.
Stir in the chopped strawberries.
In another bowl, beat the cream cheese, sugar and the 1 teaspoon of vanilla until smooth.
Add the cream cheese mixture to the bread mixture, stirring only a few turns with a spoon until the batter is streaked with the cream cheese mixture.
Place the batter into the prepared loaf pan.
Bake for 35-40 minutes, or until a wooden pick inserted into the center comes out clean.
Cool completely in the pan on a cooling rack before slicing.
