Ingredients:
2 packages frozen chopped spinach, thawed and drained
1 ½ lbs. ground beef
½ C chopped green onions
1 C sour cream
½ C grated cheddar cheese
½ C grated Monterey Jack cheese
½ C grated parmesan cheese
½ tsp salt, pepper
1 T Italian Herbs Seasoning
2 Lbs. Mushrooms (not too large of heads)
Directions:
Sauté beef w/ salt, pepper and chopped onions.
Remove stems and clean the mushrooms.
Mix the sour cream and spinach together. Set aside.
Place mushrooms cut side up in a large shallow casserole pan. Pour the beef and onions over the mushrooms, then cover with the spinach & sour cream mixture.
Mix all the cheeses together and sprinkle all over the top.
Cover and Bake at 350 degrees for 35-40 minutes.
