Sweet Potatoes with Cajun Garlic Aioli Sauce

Ingredients:

  • 6 sweet potatoes

  • ½ Cup Extra-Virgin Olive Oil

  • 4-6 T Cajun All-purpose Seasoning * make your own recipe below*

  • Garlic Aioli Sauce:

  • ¾ Cup Mayonnaise

  • 3 garlic cloves, minced

  • 2 ½ T lemon juice

  • ¾ tsp salt

  • ½ tsp black pepper

  • 1 tsp sugar

Directions:

  1. Peel and slice the sweet potatoes into wedges. Place in a large bowl and add the olive oil and seasoning. Toss to coat well.

  2. Spread out onto a parchment or tinfoil lined rimmed baking sheet. (sprinkle more olive oil if needed.

  3. Bake in a 400-degree oven for 10 minutes. Stir and then bake for an additional 10- 15 minutes or until tender.

  4. While the potatoes are baking; make the Aioli sauce – Mix all ingredients together in a small bowl and refrigerate for at least 20-30 minutes.

  5. Serve with the potatoes as a dipping sauce or drizzle on top!

To make your own Cajun Seasoning:

  • 6 tablespoons paprika

  • 1/4 cup kosher salt

  • 2 tablespoons ground black pepper

  • 2 tablespoons ground white pepper

  • 2 tablespoons garlic powder

  • 2 tablespoons onion powder

  • 1 tablespoon dried thyme

  • 1 tablespoon cayenne pepper

Mix all together in a food processor for a fine powder!
