Ingredients:
6 sweet potatoes
½ Cup Extra-Virgin Olive Oil
4-6 T Cajun All-purpose Seasoning * make your own recipe below*
Garlic Aioli Sauce:
¾ Cup Mayonnaise
3 garlic cloves, minced
2 ½ T lemon juice
¾ tsp salt
½ tsp black pepper
1 tsp sugar
Directions:
Peel and slice the sweet potatoes into wedges. Place in a large bowl and add the olive oil and seasoning. Toss to coat well.
Spread out onto a parchment or tinfoil lined rimmed baking sheet. (sprinkle more olive oil if needed.
Bake in a 400-degree oven for 10 minutes. Stir and then bake for an additional 10- 15 minutes or until tender.
While the potatoes are baking; make the Aioli sauce – Mix all ingredients together in a small bowl and refrigerate for at least 20-30 minutes.
Serve with the potatoes as a dipping sauce or drizzle on top!
To make your own Cajun Seasoning:
6 tablespoons paprika
1/4 cup kosher salt
2 tablespoons ground black pepper
2 tablespoons ground white pepper
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon dried thyme
1 tablespoon cayenne pepper
Mix all together in a food processor for a fine powder!
