Ingredients:
4 Medium Zucchini
1 tsp (each half) Italian seasoning
salt, pepper
1/2 cup pasta sauce (total) approx. 2 Tbsp. per zucchini
Mozzarella cheese, shredded (reduced fat)
Pepperoni slices
Extra Virgin Olive Oil
Directions:
Preheat oven to 425 degrees F.
Slice each zucchini in half length wise and scrape out the centers with a spoon.
Place each half on foil or parchment lined baking sheets.
Sprinkle each half with the olive oil (approx. 1-2 tsp each) and sprinkle with the Italian seasoning, salt and pepper.
Bake in the oven for 18-20 minutes, or until tender. (At this point, you can cover and set aside until later, or make right away and serve.) **(I roasted mine ahead of time and set aside until dinner later.)
Add the mozzarella cheese over the halves (as much as you want) and then place the pepperoni slices over the top of the cheese.
Bake for 8-10 minutes until the cheese is melted and serve.
** hint ** If making ahead of time and saving to bake for later - bake for 10-13 minutes to heat through and melt the cheese.
